Storing Fresh Ginger
I enjoy cooking with ginger. It is a little expensive to buy it fresh at the store, but if you store it properly it will last you some time. And it is wonderful to cook with. It has a fabulous taste and a wonderful aroma.
When I buy fresh ginger, I divide it up into what I think I’ll use in two months and then I store the rest.
The portion I plan to use within two months I leave whole and unpeeled, and store in a plastic bag in the refrigerator. As I need it, I remove it, slice or cut off the outer skin (peel it), and then slice and/or dice as needed for my recipe.
The rest goes into longer term storage. I go ahead and remove the skin and cut into small chunks. I then place it into a small jar. Then I pour Vodka into the jar to cover the ginger. Then I can store in the refrigerator for quite some time since it is preserved in the vodka. And afterwards, you can make an interesting Ginger Cocktail with that vodka! Ginger Infused Martina! Hmmm. Gotta try that.
