Homemade Mayonnaise

Recipe: Basic Homemade Mayonnaise


Summary: Make Your Own Mayonnaise

Ingredients

  • 2 large egg yolks (brown eggs are good in this recipe)
  • 1/2 Tablespoon of Lemon Juice
  • 1 teaspoon white vinegar
  • 1 cup oil (corn, canola, or vegetable)
  • Salt ( I use fine ground Sea Salt)
  • Fresh Ground Black Pepper (you can use regular ground, I just prefer fresh ground)

Instructions

By hand: (recommended)

  1. Beat the egg yolks until frothy.
  2. Gradually add about half of the oil, incorporating with a whisk before adding more.
  3. Add the salt, pepper, vinegar, and lemon juice.
  4. Whisk again.
  5. Add the remaining oil gradually.
  6. Be sure to whisk until you get it well blended and creamy.
  7. Okay, now whisk for another hour (JUST KIDDING!)
  8. Then refrigerate.

ALTERNATE method, but I prefer the above:

In food processor:

  1. Place eggs in food processor.
  2. Add lemon juice and vinegar along with a small amount of water (1 TBSP)
  3. Blend 40 seconds.
  4. With processor running, slowly add the oil.
  5. Once mixture thickens, add seasonings (salt and pepper).
  6. Process until blended well, use a spatula to help blend.
  7. Refrigerate.
  8. Enjoy!
