Delicious Breakfast Burritos

We had these for breakfast this morning and they were incredibly quick and easy to make and also very filling. I used pork sausage but I think they would also be good with kielbasa or hamburger meat. I served them along with skillet fried hash brown potatoes.
Optional additions might be sliced jalapeno peppers from a jar, sour cream, diced tomatoes, and small cubed fried potatoes.
Ingredients
- Soft flour tortillas
- Salsa or picante sauce
- 1/2 pound pork sausage (we like the Jimmy Dean reduced fat sausage)
- 3-4 Eggs
- Packaged shredded cheese - we use Mexican cheese blend or Four cheese blend
- Hot sliced or bell peppers (optional)
Instructions
- Crumble pork and cook in skillet.
- Add peppers to sausage mixture if using them.
- Remove to drain thoroughly on paper towels.
- Wipe skillet with paper towel.
- Return drained sausage to skillet.
- Beat eggs with a bit of milk, salt, pepper, and a handful of the cheese blend.
- Add egg mixture to sausage in skillet to scramble eggs.
- Have tortillas warming in oven or place in microwave a few seconds to warm.
- Add sausage egg mixture to each tortilla and then add more shredded cheese blend.
- Fold in at one end, then fold in sides burrito style.
- Add salsa to inside of burrito or on the side of the plate for dipping.
- You can also add salsa and sour cream to the top and eat with a fork rather than holding with your hands.
